Tomato Watermelon and Cucumber Salad Recipe with Feta Cheese

This refreshing salad combines the best of summertime flavors- tomato, watermelon, and cucumber- with salty feta and spicy red onion.  Add fresh mint from the garden and a drizzle of Watermelon Balsamic Reduction (recipe below) for an simple, yet elegant, feast.   Serve as is, or on a bed of arugula accompanied by a slice of crusty grilled bread. 

Tomato, chopped
Watermelon, chopped
Cucumber, chopped
Red onion, thinly sliced
Crumbled feta
Mint, thinly sliced

Combine ingredients in a large bowl.  Toss gently.  Serve.

 

Watermelon Balsamic Reduction
1 cup watermelon juice
½ cup balsamic vinegar
1 tbsp agave nectar

Combine ingredients in small pot.  Simmer over medium heat until it has reached a thick, syrupy consistency and reduced to about ¼ cup.

Drizzle over Tomato, Watermelon & Cucumber Salad, mixed greens, or grilled bread spread with goat cheese.

  1. This combo is SO delicious! I enjoyed something similar at a restaurant in FL this past March…..couldn’t believe how good it tasted. I’m def going to try this one & share it!
