Chicken Satay

This meal is always a hit at work and at home.  The chicken is super flavorful from the marinade.  And the peanut sauce… it’s ridiculous.  Seriously, I like the bowl every time I make it.  I like to serve this with blanched green beans.  But broccoli, carrots, cucumbers, celery, or peppers would work well too.  Even whole leaves of romaine lettuce would be delicious dunked in.  Add brown rice and you’ve got yourself a meal.  However, this dish makes a great party appetizer as well.

Serves 4
½ c soy sauce
¼ c lime juice
¼ cup water
3 tbsp maple syrup
2 tbsp sesame oil
1 tsp chili flakes
12 chicken tenders (3 per person for a meal)
12 bamboo skewers (soak in water for 1 hour before grilling)

Combine soy sauce, lime juice, water, maple syrup, sesame oil and chili flakes.  Add chicken tenders and mix well to coat.

Marinade chicken tenders for 30 minutes to 1hr.

Remove from marinade and skewer. Grill on medium-high for 2-3 minutes per side, or until cooked through.

Serve with steamed veggies (I like green beans or broccoli), couscous, and Peanut Ginger Sauce.
