The whole family will enjoy this Spring-fresh twist on hummus. Serve with whole wheat pita chips.
1 cup sweet peas
1 cup shelled edamame
1 15oz can white beans, drained
1-2 cloves garlic
2 tsp mint, chopped
2 tsp parsley, chopped
2 tsp chives, chopped
Juice of 1/2 lemon
1/3 cup olive oil, plus more if needed
Combine all ingredients in food processor and puree. Add more olive oil (or water) if your hummus is too thick. Season with salt and pepper to taste.
