I was at the Chester Farmers Market recently and came across some beautiful tri-colored carrots. I got two bunches, brought them home, and made this incredibly simple and delicious Market Carrot Salad.
Thinly slice your carrots. Add in some thinly sliced red onion and a handful of fresh chopped mint. Give a good splash of white wine vinegar, a drizzle of honey, and a sprinkle of salt and pepper. Toss well and serve.
