1 summer squash, sliced into ¼” rounds
1 zucchini, sliced into ¼” rounds
2 tomato, sliced into ½” rounds
Fresh mozzarella, thinly sliced
Lemon Basil Caper Pesto (recipe Below)

Heat grill to medium.  Drizzle lightly with olive oil, season with salt and pepper.  Grill the veggies lightly on each side, 2-3 minutes per side.  Remove.  Layer the tomato, zucchini and squash with mozzarella and top with pesto.  You can subsitute goat cheese for the mozzarella if desired.

Lemon Basil Caper Pesto
2 cups basil leaves
1 clove garlic
3 tbsp capers
Zest and juice of 1 lemon
½ cup olive oil
Salt and pepper

Combine all ingredients in a food processor and process until well combined.   Season with salt and pepper to taste.
